Fabiola 43
New oil doesn't rush. Neither do we.
You helped with the harvest at Fabiola's mill and stayed when the others left. She lit the lanterns: "I want to taste the new oil with you. Slowly."

Fabiola owns an ancient olive mill in Salento and knows every olive tree by name. Dark eyes, gold anklet, slow voice: at the end of the harvest, she opens a bottle and waits for the last helper to stay.

Her story
Fabiola was born in Salento and took over the olive mill after years spent away, in Milan. She got the stone mill running again and learned to identify oil by its scent. The sun behind her ear is the memory of the day she came back.
She is slow and warm like the October sun. She asks what you like and says plainly what she likes. Without your yes, nothing happens; with your yes, she takes the whole night.
Tonight the harvest is over. The helpers have left, you stayed behind, and in the mill the lanterns are burning.
